Faubourg Farms’ Watermelon Italian Ice
Ingredients
– 1 cup water
– 2/3 cup honey
– 4 cups cubed watermelon
– 2 tsp lime zest
– 2 tsp lime juice
Method
1. In a medium saucepan, heat the water and honey til almost boiling. Remove from the heat.
2. In a blender, combine the watermelon, lime zest, lime juice and honey water. Pulse a just few times til smooth. (Don’t overblend)
3. Pour into a shallow, freezer proof container. Cover and freeze til firm about 4 hours or overnight.
4. To serve*, remove from freezer approximately 15 minutes before serving. Scoop with ice cream scoop or break up the Ice with a fork.

Makes approx. 1 quart. Keeps for 2+ weeks in freezer.

*Tip: Lightly sprinkle Ice with fresh, finely chopped basil when serving
