Maria's Coquito
Makes about 6-7 cups, enough for a small gathering or to gift a few bottles.
ingredients
- 1 can (13.5 - 15 oz) coconut milk
- 1 can (12 oz) evaporated milk
- 1 can (14 oz) sweetened condensed milk
- 1 can (15 oz) cream of coconut (coconut cream)
- 1-2 cups white rum, to taste
- 1-2 tsp vanilla extract
- 1-2 tsp ground cinnamon, plus more for garnish
- Optional: pinch of nutmeg, cinnamon sticks for the bottle
instructions
- Add the coconut milk, evaporated milk, condensed milk, and cream of coconut to a blender. Blend until completely smooth (about 20-30 seconds).
- Add 1 cup of white rum, 1 teaspoon vanilla, and 1 teaspoon cinnamon. Blend again to incorporate.
- For a stronger drink: add up to another cup of rum. Adjust cinnamon or vanilla to your liking. If you prefer it less thick, add a splash of regular milk or more rum.
- Pour into glass bottles or jars. Add a cinnamon stick if you want extra flavor. Refrigerate at least 4 hours, ideally overnight. It thickens as it chills.
- Shake well before pouring. Serve cold in small glasses with a light dusting of cinnamon.
